We know the struggle of wanting a comforting, restaurant-style pasta without the fuss of multiple pots, pans, and a long ingredient list. This recipe is the solution, offering the rich, savory depth of a slow-simmered sauce in a fraction of the time. It’s the kind of comfort food recipe that everyone at the table will love, from picky kids to hungry adults.

Why This Creamy Ground Beef and Pasta Recipe is a Game-Changer

1. The One-Pan Wonder Method

Forget a sink full of dishes! The magic of this ground beef and pasta recipe is that the entire sauce is built in the same pan you use to brown the beef and sauté the vegetables. This isn’t just about easy cleanup; it’s a flavor powerhouse. All the delicious browned bits from the beef and the savory juices from the mushrooms stay right in the pan, creating a deeply flavorful foundation for your sauce.

2. The Secret to the Velvety Sauce

You might be surprised to see low-fat cream cheese as the base for our creamy sauce. Why does it work so well? Unlike heavy cream, which can be overwhelmingly rich, or flour-based sauces that can feel heavy, cream cheese melts into a luxuriously smooth and velvety pasta sauce that is tangy, rich, and clings perfectly to every noodle and morsel of beef. It creates a creamy coating that is incredibly satisfying without being greasy.

3. Maximizing Flavor: The Mushroom Technique

Many recipes have you toss everything in at once, but we take an extra step to build flavor. By pushing the beef and onions to the side and cooking the mushrooms in the hot center of the skillet, we give them a chance to properly sear and release their moisture. This caramelization unlocks their deep, earthy umami flavor, which is the secret to this ground beef pasta recipe tasting like it simmered for hours.

Perfect for Your Busy Weeknights

This dish is the epitome of a quick and easy dinner. From stovetop to table in about half an hour, it’s a lifesaver on those busy nights when time is short but a homemade meal is non-negotiable. It’s also incredibly adaptable—use whatever pasta shape you have in the pantry, from fettuccine to penne to rigatoni.

So, grab your favorite skillet and make a meal that will earn a permanent spot in your dinner rotation. This isn’t just another pasta dish; it’s your new go-to for a stress-free, delicious, and utterly comforting meal.

Total Time 35 minutes
Servings: 4
Course: beef, Main Course, One Pot Meals, Pasta
Cuisine: American

Ingredients

  • 10 ounces pasta fettuccine or penne works well in this recipe.
  • salt for cooking the pasta
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 pound 90% lean ground beef
  • seasonings: salt, pepper, Italian seasoning, and red pepper flakes to taste
  • 12 ounces sliced fresh mushrooms canned can substitute in a pinch
  • 1 cup low-sodium beef broth
  • 4 ounces low-fat cream cheese

Method

  1. Bring a large pot of salted water to a rolling boil to cook the pasta according to package directions, reserving a cup of the pasta cooking water.
  2. While pasta cooks, dice the onion and mince the garlic.
  3. Heat a large skillet over medium-high heat and add the tablespoon of olive oil. Add the diced onions and cook until translucent, about 4-5 minutes. Add the minced garlic and cook 1 minute. Add the ground beef and cook, breaking apart the beef, until browned, about 5 to 7 minutes. Season with salt, pepper, and optional seasonings.
  4. Push the meat and onions around the outside of the skillet and add the mushrooms in the hot center, cooking until they have released their moisture—about 5 minutes.
  5. Stir the meat and vegetables together well, then stir in the broth. Heat to simmer, about 2 minutes.
  6. Add the low-fat cream cheese and blend in well.
  7. Finally, toss in the drained pasta, mixing it thoroughly with the beef mixture.

Notes

Pasta Water is Gold: Don’t forget to reserve that pasta water! If your sauce thickens a bit too much upon adding the pasta, a splash of the starchy cooking water is the perfect trick to loosen it up and help the sauce cling even better.
Mushroom Note: While fresh mushrooms are ideal for the best texture and browning, a well-drained can of mushrooms can work in a pinch for a super-speedy version.
